Wanna eat healthier? Like more fruits and veggies and less processed stuff? You gotta make a plan. [insert fancy scientist voice]: Studies show that making general statements such as “I’m gonna start eating healthier” or “I’m gonna be better at saving money” or “I’m gonna start being on time” don’t work. You gotta make a plan. What changes will you make? How much money will you save, and how often? Where will you put the money? When are you starting? Specific goals are needed.
So to eat healthier, make a plan. Put healthy stuff on your grocery list. Take time to chop up veggies and pack them in your lunch. Try making these amazing muffins and eating them for breakfast! They are soooooo yummy. I’ve made them 4 times already. But they don’t last too long. Since they’re made with fresh fruit, keep an eye on them. They can get moldy after 5 days or so.
Baked Oatmeal Muffins
1 ½ cups almond milk or coconut milk
2 ½ cups oats (not quick cook or instant. I used organic)
2 mashed bananas
¼ cup honey
1 tablespoon cinnamon
1 ½ teaspoons baking powder
1 cup raspberries (or try diced strawberries! Or blueberries.)
1 tablespoon coconut oil melted (to grease the pan. Or you can use paper muffin cups)
Mash bananas and raspberries. Add in all other stuff. Grease a 12 cup muffins tray with the coconut oil. Divide mixture evenly into the 12-cup muffin tray. Muffin cups will be full…the batter won’t rise when it’s baked. Bake at 350 for 30 minutes. (If you throw in a few extra oats and maybe another half banana, you can stretch this to get a few more muffins).
